LASAGNA el’BADENJAN: Middle Eastern Style Eggplant Parmesan with Za’tar and Sharp Cheese (fry-free/flourless)

Aleppo pepper flakes (¼ teaspoon cayenne + ¼ teaspoon paprika can be substituted)
Za’tar spice mix (or mix of dried oregano and thyme)
Mozzarella cheese OR hard sharp cheese (such as kashkaval or Manchego)
Parmesan cheese
