YOM HA’ATZMAUT: Classic Style Israeli Hummus with Tahini and Za’atar Pita Chips

GENERAL INGREDIENTS:
Canned chickpeas OR dried chickpeas (more traditional)
Baking soda (if using dried chickpeas)
Kosher salt
Za’atar
Tahini (sesame paste)
Extra-virgin olive oil
Aleppo pepper or za’tar spice blend (any mix is fine)
Pita or flatbread (such as naan)
Garlic
Lemon

EQUIPMENT:
Measuring cups and spoons
Cutting board and chef’s/chopping knife
Food processor and rubber spatula
Medium saucepan (if using dried chickpeas)
Small bowl or jar, for mixing olive oil and spices, for pita chips
Pastry brush, for brushing oil on pita bread for pita chips
Large baking tray or cookie sheet, for pita chips
Small round or oval plate, for serving hummus
Small bowl, for serving pita chips
