D’JAJ MISH MOSH: Syrian Sweet-and-Tart Chicken with Apricots, Tomatoes, and Lemon

GENERAL INGREDIENTS:
Chicken pieces (white and dark meat; preferably bone-in)
Dried Turkish apricots
Vegetable, canola, sunflower, or safflower oil
Tomato paste
Worcestershire sauce (preferably Lea & Perrins, or brand with tamarind)
Tamarind paste/concentrate (looks like black strap molasses)
Dark brown sugar
Kosher salt
Black pepper
Lemons
Onions
Garlic

EQUIPMENT:
Measuring cups and spoons
Chef’s/large chopping knife and cutting board
13-inch roasting or baking pan (for baking chicken with sauce)
Large skillet or frying pan (for searing chicken pieces and pre-cooking sauce)
Small and large mixing bowls
Large plate, for seared chicken pieces
