FRESH SALMON BURGERS with Scallions, Ginger Root, and Garlicky Mayonnaise Dressing

Scallions and/or chives or red/white/yellow onions
Parsley and/or cilantro leaves
Sliced cucumber, tomato, and avocado, for serving, optional
Freshly grated ginger root or ginger paste from a jar
Garlic
Plain breadcrumbs or gluten-free breadcrumbs
Whole wheat hamburger buns or gluten-free buns, optional
Salt and black pepper
Soy sauce,liquid aminos, Worcestershire, or tamari sauce
Rce or white vinegar
Extra virgin olive oil
Regular, “lite,” or low fat mayonnaise
EQUIPMENT:
Measuring cups and spoons
Medium mixing bowl and spoon
Small bowl
Chef’s/chopping knife and cutting board
Large skillet (preferably non-stick) with plastic spatula
Pastry brush or paper towel folded into quarters (for brushing burger)
Plate lined with paper towel
Peeler and microplane or grater (if using fresh ginger root)
